I know there are cannons used in tes by the redguards but i'd like to know how we know that. What are the sources? I know there's a reference to them in a joke but that's about it. I was wondering if we saw them in arena or daggerfall, maybe even redguard. I'm just curious.

There are only 2 pieces of actual evidence that I know of that support the existence of cannons in tamriel. The Jokes lore-book, in which the word cannon is used as part of a punch line (Also the only time the word "cannon" is written/spoken in all of elder scrolls). This joke also reveals that the Sentinal Army (Redgaurds) were the ones who used them. The other piece I've heard before is in The Elder Scrolls Adventures: Redgaurd, you can allegedly see cannons on the Redgaurds ships (I've never personally seen this or have seen screenshots proving this). Beyond that, as far as I know, there is nothing else

So we know very little about them and how they actually fire

If there was ever a race/group of people who would've used something sophisticated as a cannon, it would've been the Dwemer, and they've been gone for thousands of years.

Considering the Imperials have been to the moons and set up a colony on one of them which was long after the Dwemer disappearance I don't think a cannon would be too sophisticated.

Also the game Redguard takes place on Stros M'Kai where there is a Dwarven ruin so it's fairly logical to assume the Redguards looted the cannons from the ruin and used them on the ships there.
