I'm thinking of making a Imperial Sorcerer. I played one during beta, however I'm not sure if a Imperial Sorcerer is actually viable or if a Imperial Nightblade is a better pairing, any thoughts would be appreciated.

the class bonus for imperials is for running a sword and shield, so it's up to you but an imperial sorcerer would be a waste of the bonus imo

You don't have to put points into the racial. Just use those points on something else that compliments your build.

I was actually going to use a sword and shield for the charge a and stun....so basic cast a knockdown spell, throw lightening, charge stun, lightening until mob is dead

I like the idea of an Imperial Sorcerer.
Would you use Daedric summoning on be more focused on your own ability?

I think if you want to utilize the sword and board skill your best bet is not to spend any points in summoning.
But you could make use of the mages guild skills too.

Best is a term I don't use for ESO.

Because you might not use a single skill from your race, or even class.
Ive even experimented and created very nice looking builds without touching those skill lines.

Is summoning really strong?

Like any skill line, Summoning can be really strong, I have seen collateral damage done by them.

But you want to complement your play style, so if you desire the ability to be a sword and board who throws some destruction spells out, you probably wont get what you are after by summoning things.

However if you want to offer support, you could have winged twilight with mana restoration to your group, or even use clannfears to absorb some incoming damage. Even potentially use them as your primary damage source while you spend time protecting your allies.

Honestly, if you can tell me how you like to play, I can fiddle around with the calculator on esohead and show you what I mean, its also good practice for me to learn skills that I wont be using.

There have been a lot of these 'which race should I pick' type of topics, and there is one important thing to keep in mind. Soft caps. There will be a point on most boosts, where they max out and it is a waste to increase them. Health and stamina are two of those, meaning the only racial an Imperial has, that another race couldn't hit the soft cap max of same as an Imperial, is the Red Diamond skill that gives a chance on melee strike to absorb health.

Sure, that Argonian or High Elf would have to spend more skill points into a class line, or use more enchants, or whatever than that Imperial to reach the soft cap, but at the same time, the Imperial has to spend more skill points into those racial skills than the other races, leaving him with fewer skill points for everything else. So it is a trade off in most of these situations, and won't have an impact on your gameplay unless you are a min-max type of person, and you absolutely want that Red Diamond skill.

The fires burn. Our supplies are spent. Axes are dull, and armor is rent. The enemy approaches, our doom, they seek. We are Daggerfall Covenant. We are Orcs. Our comrades, they come, for glory they seek, at the side of our iron and steel. We will not fall.
