SKYRIM TIL TESO! What mods would you recommend?

So, now that there are many mods out for Skyrim, I'm going to reinstall the game and play it as much as I can until launch - likely avoiding the main story for the most part.

What mods would you ladies and gents recommend?

I second the Unofficial Skyrim Patch.
SkyUI is also a must.

Other than that though, I don't feel anything else is necessary. However, I did try out a couple of the HD mods which were very pretty and detailed, so if your computer can handle it I'd say go for that too. Just make sure that they are all compatible and you load them in the correct orders.

Lush Grass
Better Dynamic Snow"

Unfortunately I don't play female characters and I haven't seen a lot of mods that make the male models look less crummy - the player models are probably the weakest thing about the game to me.

There are many mods that I recommend.

"Interesting NPCs"
is the most amazing mod out there. And SkyUI is the second most amazing! ;)

I highly recomend Skyrim Redone, also none as Skyre. It's a complete overhaul of the leveling system, and if you also add to it the mod Alternate Start and/or a survival mod it really makes the game take on a whole new feel. I really enjoy it and it makes the game much more challenging.

I can see you prefer graphic mods. I don't have a lot of those but I'll share my favourites with you. I recently got past level 5 myself actually and am finally getting into the game. I'm also on the lookout for mods, mostly gameplay, realism and challenge mods.

The Unofficial mod and SkyUI of course have already been mentioned.

Interface and annoying things
Reduced distance NPC greetings will get those annoying NPCs off your back until YOU want to make contact.
Faster vanilla horses. Now you can actually outrun some creatures. Also great for anyone who, like me, refuses to use the fast travel feature.
Disable screen blood splatter takes out those annoying blood stains before they appear.
No kill moves removes all kill moves. I can't tell you what a relief it was to find this mod.
True Compass removes everything except cardinal directions (N,E,S,W) from the compass. Now you can find things without the hand holding.

Realism
Open cities removes the loading screen when you enter a city. Just open the gate and walk right in.
Kill them all makes every adult person killable.
No children makes children killable by changing their category to adult. No, this is not so I can kill children. It's so I need to be more careful about where I cast that fireball.
Realistic ragdolls and force
Hired thugs fix will make guards help you fight thugs.
Dynamic fires lets you start a fire and put it out at a campsite or bonfire.

Graphics, sounds, creatures
Detailed cities fleshes them out a bit.
Enhanced dynamic weather system
More rain
Deeper Snow. This actually makes blizzards problematic because you can't see shit. It's hard to even see where the road is.
Birds and flocks
Pure waters
Here there be monsters adds huge monsters to the Ghost Sea.
I also had a great mod series called Sounds of Skyrim but it's gone from Workshop and Nexus now. Maybe it's not supported anymore.

...and finally a few for the grammar nazi in you...
Hearthfire fixes Heartfire (the month) by renaming it Hearthfire while Correctly named torchbug parts fixes Torchbug Thorax by renaming it Torchbug Abdomen.

I'm also looking for mods which will extend game play like really quality quests, new areas etc. because I want to avoid the main story this time and just play in the world :)

Searching for mods in Nexus is tedious to say the least and in Workshop it's bloody impossible.
Skyrimgems seems a bit daunting to read through but it's an absolutely awesome collection of links for great mods, all categorized.
