Personally, my favorite was the climax of the main quest in Skyrim, where you visit Sovngarde and find Alduin. Purely because of how awesome Sovngarde looked! Although, Sanguine's quest in Oblivion was fairly amusing.

What are your favorites?

Breaking into white gold tower during the thieves guild. Just felt like such a fun stealth quest.

In skyrim, probably fighting alduin. Didn't think skyrims quests were that great.

In morrowind, I suppose I enjoyed meeting dagoth fyr and the dwarf (can't remember his name).

Morrowind: When you become immortal (not really immortal, but un-aging). Not only do you become immortal, you meet the last Dwemer alive.

Oblivion: Either stealing that Elder Scroll or the entirety of Mankar Camoran's paradise.

Skyrim: Oooh, tough one. DLC allowed, I would say the one on the Dawnguard questline where you meet the snow elf. No DLC, I would say walking into Sovngarde.

Clearing the goblin caves of the two goblin tribes at war in Oblivion. I loved the dungeons in Oblivion they were very thought out all the rooms and items seemed to have functions in the dungeons. It was fun being attacked by a goblin chef lol

Oblivion: I have to say the dark brotherhood quest line. It was very amusing and creative. Letting a stuffed animals head fall on that wood elf in Bruma never gets old.
Skyrim: The quest where you meet that snow elf Gelebor. I realy liked the tempel of aur-iel's design and finally meeting a sane snow elf was a nice touch.

Oblivion: A Brush With Death side quest. Some painter was disappeared.I walked into his room and began to explore. There was nothing, but suddenly I saw that I could get into his picture. I could not believe it! And I was in his picture and I found him.

Morrowind: Killing all of the slavers who owned Argonians then letting the Argonians free

Oblivion: The "freedom-quest" where you chance upon a squad of Imperial soldiers about to assault an Oblivion gate in the wilderness. This quest totally caught me by surprise, and I was happy to know I wasn't the only one cleaning those things up across Cyrodil.

Skyrim: The defense of White-run. Although I wish it would have been a lil more epic with more soldiers.

Skyrim is hard to choose, because the quests I found were not that exciting, but ill go with the Quests for Neloth (love his attitude towards things)

Oblivion would be Dark Brotherhood

Morrowind, I love pretty much all of it, time consuming, but good, Id call it a tie between all the main quest lines, for vanilla + bloodmoon and tribunal

Couldn't say "the favorite". I'm a quest seeker and TES has some of the best quest in my opinion!
Yet I have some unfavorite quests (very unfavorite):
Morrowind: getting undressed and then kissing Crassius to get him sponsor you :O
Oblivion: N/A Oblivion had the best quests I've played in any game with the MQ being the pearl.
Skyrim: The Blessing of nature-not really a bad quest-but: as a wood elf hurting a three is just wrong (and as a human to). If I accepted Maurice company it was imperative to first discover Eldergleam for fast travel as Maurice can easily be killed by a pack of wolves or a saber-cat. So, with resolute determination, I've reached Eldergleam Sanctuary. Beautiful, magical, wood-elvish place. It turns out I have to attack the three with the knife. Gods! Then, after the crime, Maurice shouts at me calling me "a man of violence"! I'm not a man! I'm an elf! WTF! I gladly accept his plan to finish the quest and with the little sampling I'm off. I stop to talk to Sond and he repudiates me like I'm some kind of leper and I have no choice but to leave this underground paradise in shame. I guess : "No good deed goes unpunished!"

Daggerfall: The one where you anger an Orc shaman and they teleport you into a dungeon. Considering how the game's dungeons work getting out can be quite the adventure in and of itself!

Morrowind: The pilgrimage to the Sanctus Shrine, especially if you don't "cheat" by abusing the Intervention and propylon chamber systems, or, worse, Mark/Recall. :p

Oblivion: The Dark Brotherhood quest where you have to kill everyone in a party, preferably making them suspect each other in the process.

Skyrim: The Burning of King Olaf quest. Especially how well it shows the difference between ancient Norse (with its focus on alliteration and sounds) and modern "regular" (with its focus on rhyme) poetry. :)

Count only the happy hours.

In morrowind the main quest where you first enter the ghost gate around the volcano. was kind of epic when you first went through.

Holy shit, that was such a fun quest. My favorite would be fighting Jyggalag in the Shivering Isles or Sheogorath's quest in Skyrim. Honestly, the whole Shivering Isles expansion was just fantastic, but nothing (and I mean NOTHING) felt as epic as when you completed the prophecy of the Nerevarine. When Azura spoke to you, I was like "NO WAY!" So much fun.

I enjoyed the Oblivion Dark Brotherhood quests, they required an air of creativity

The Thieves Guild quest in ES:IV Oblivion to steal the Elder Scroll. So much work.. And yet, so rewarding. Lots of cool sights to see and mystical items encountered on that quest, too. Felt like I was part of the ES version of Oceans 11 and Mission Impossible combined.
